I’m back from Colorado. It felt strange driving past my old house; I hadn’t seen it in ten years. Other than a worn-looking fence, it looks the same— the trees and bushes that we planted aren’t much bigger, and the slightly crooked mailbox that I put in when we moved in is still slightly crooked.
It only took a couple of days of being on the road to get tired of dry sandwiches. Last night, I stuffed some lean pork chops. I softened some diced carrot, celery and onion in a bit of olive oil, then added some cubed bread, chicken stock, salt, rosemary and sage. I spooned this into pockets I cut into some lean pork with a very sharp knife. After coating the chops with more sage and ground rosemary, I baked them at 325º for half an hour. Broccoli was the side.
Mary asked me, “It’s only a Monday; why do you want to do all that?”
Well, it was tasty, and only about twenty minutes of kitchen time.
